An impressive little gluten free pud for very little effort. Worthy of a dinner party.
2 tbsp Glutafin Gluten Free Select Multipurpose White Mix
200g gluten free 70% cocoa solids dark chocolate
100g unsalted butter
115g caster sugar
3 eggs (lightly beaten)
2 tbsp ground almonds
1 tsp gluten free baking powder*
½ tsp natural vanilla extract

1. Preheat oven to 200°C /180F/Gas Mark 6.
2. Place the chocolate and butter into a bowl and place over a saucepan of simmering water (ensuring the bowl does not touch the hot water). Stir the mixture until it is just melted and remove from the heat.
3. Place the mix, eggs, sugar, almonds, baking powder and vanilla extract into a bowl and mix until combined. Slowly stir in the chocolate.
4. Pour the mixture into four 250ml ramekins and place onto a baking tray. Bake for approximately 15 minutes until the edges are set.
