Our croquetas make a great dinner or an afternoon snack!

  • Ingredients

    Down
    1. 75g Mature Cheddar, grated
    2. 40g onion, finely chopped
    3. 25g olive oil
    4. 25g butter
    5. 400g milk
    6. 95g Glutafin Gluten Free Select Multipurpose White Mix (for the sauce)
    7. 50g ham, in small piece
    8. 4 slices of Glutafin bread made into breadcrumbs
    9. 3 tbsp Glutafin Gluten Free Select Multipurpose White Mix (for the crumb)
    10. 3 eggs, beaten
    11. Salt and Pepper
    12. Nutmeg

    *This recipe can also be made with the Glutafin Gluten Free Multipurpose White Mix

  • Method

    Down
    1. Melt the butter and oil in a pan and fry the onion for 5 minutes.
    2. Add the 95g Flour Mix and heat for 1 minute.
    3. Whisk in the milk, salt and pepper and nutmeg and cook until thickened – stir constantly to get a smooth sauce.
    4. Add the cheese and heat until melted, add the chopped ham and mix to combine
    5. Pour into a tray and cool (30 mins).
    6. Leave in the fridge for 8 hours minimum.
    7. Take three bowls and put the beaten eggs in one, the 3 tbsp Flour Mix in another and the breadcrumbs in the third.
    8. Mould the cheese and ham mix into a croquette shape, the easiest way is by using two spoons to form an oval. Coat in flour mix, then egg, then breadcrumbs.
    9. Chill in the fridge for 1 hour.
    10. Fry for 2-3 minutes in a pan of oil or deep fat fryer at 180°C until golden on the outside and warmed through in the centre.
