225g Glutafin Gluten Free Select Multipurpose White Mix
1 tbsp gluten free baking powder
½ tsp xanthan gum
50g butter
40g caster sugar
55g clotted cream
85ml milk + extra for glazing
70g sultanas or raisins
1. Pre-heat the oven to 200°C/180°Fan/Gas Mark 6
2.Place the flour mix, gluten free baking powder and xanthan gum into a large bowl. Rub in the butter until the mixture resembles fine breadcrumbs, stir in the sugar. Add the dried fruit.
3. Add the clotted cream and milk to form a soft not sticky dough.
4. Turn out on to a surface lightly dusted with flour mix and knead gently until smooth.
5. Roll out to a thickness of 3 – 3.5cms. Cut into rounds using a 7cm cutter.
6. Place on a greased baking sheet, brush top with a little milk.
7. Bake in pre heated oven for 16 minutes, until risen and golden brown in colour.
8. Transfer to a cooling rack.
9. Serve warm, split in half and spread with jam and cream or cream and jam (depending on where you live!)
Store in an airtight containter for 3 – 4 days. Freeze for up to 3 months. Warm before serving.
